SUCCOTASH


AMERICAN STYLE (NEW ENGLAND STYLE)

You Need: (To serve 4 people)
  • Corn (Makki/Musukina Jola) - (1 medium cup)
  • Red Kidney Beans (Rajma) - (1 medium cup)
  • Diced Zucchini (Tori/Turaii) - (1 medium cup) Optional
  • Diced Bell Peppers/Capsicum (Shimla Mirch/Donne Menasinakai) - (1 medium cup) Optional
         I am using Red Bell Peppers as it will add some color to my Succotash :)
     
      To Garnish:
  • Chopped Basil (Tulsi) - (½ cup)
         Instead of Basil you can also use cilantro/coriander leaves
  • Finely Chopped Onions - (1 medium sized)
  • Finely Chopped Tomatoes - (1 medium sized) Optional
  • Garlic Paste/Finely Grated Garlic - (1 ½ tbsp)
  • Black Pepper Powder (Kala Mirch Powder/Kari Menasina Pudi) - (1 ½ tsp)
  • Butter (1 ½ tbsp)
          Instead of butter you can use Olive oil.
  • Salt
  • Water (½ Glass)
Method:
  • Soak Red Kidney Beans overnight/6-7 hrs. Pressure cook them for 2-3 whistles. Strain out the water.
  • Boil the water, add corns and cook for about 15 minutes or microwave them for about 10 mins. Strain out the water.
  • Heat Butter/Olive oil in a sauce pan and add chopped Onions, finely grated Garlic and little salt. Saute for a minute till the onions turn tender.
  • Add chopped Tomatoes. Mix well and saute for 2 minutes.
  • Add diced Zucchini and diced bell peppers. Mix well. If the mixture is getting too dry sprinkle some water. cover the lid and cook for 2-3 minutes.


  • Add boiled Red Kidney beans, boiled corns, black pepper powder, adjust the salt and Mix well. Cook for a minute. If the mixture is getting too dry sprinkle some water.

  • Add chopped basil and mix well. Saute for 2 minutes.

  • Switch off the gas/stove and server warm.
