SPANISH RICE

MEXICAN STYLE


Preparation Time: 20-30 Minutes


You Need: (To Serve 4 People)

Ingredients
Quantity A Quick Comment
White Rice 1 medium cup Instead of white rice you can also use brown rice.
Finely Chopped Onions 1 medium cup/1 medium sized Onion
Tomato Paste/Sauce or Chunky Salsa 5 tbsp
Minced/Finely Chopped Garlic 2 Garlic Cloves
Oregano (Optional) A Pinch In Hindi - Ajwain ki Patti (अजवाइन की पत्ती)
In Kannada - Ona Oom Beejada Yelei (ಒಣ ಓಂ ಬೀಜದ ಎಲೆ)
Cumin Powder (Optional) 1 tsp In Hindi - Jeera Powder (जीरा  पाउडर)
In Kannada - Jeerige Pudi (ಜೀರಿಗೆ ಪುಡಿ)
Red Chili Powder 1 tspIn Hindi - Mirch Powder (मिर्च  पाउडर)
In Kannada - Menasina Pudi (ಮೆಣಸಿನ ಪುಡಿ)
Butter/Olive Oil 2 tbsp
Vegetable Broth/Water 2 cupsDouble the quantity of Rice
Salt To taste
To Garnish:
Shredded Cheddar Cheese (Optional) ½ cupInstead of Cheddar you can use any shredded cheese.
Finely Chopped Spring Onions (Optional) ½ cup

Method:
  • Heat 1 tbsp of Butter/Olive oil in a pan. Add rice and stir so that rice is coated with butter/oil. On a medium heat, saute rice for 5 minutes until rice is browned.
  • Heat 1 tbsp of Butter/Olive oil in a separate skillet. Add finely diced Onions, minced Garlic and a little salt. Mix well and Saute for a minute until Onions turn tender.
  • Add Tomato paste/Tomato Sauce, Red Chili powder, Cumin powder, Crushed Oregano and mix well. Saute for few seconds till the mixtures thickens.
  • Add Vegetable broth/Water and mix well. Cover the lid and bring the broth to a boil.
  • Add the browned rice and salt to the boiling broth. Mix well and Cook the rice on a medium heat, without disturbing by covering the lid for 15 minutes.
  • Switch off the gas/stove and garnish the rice with some finely chopped Spring Onions and shredded Cheddar Cheese. Serve Hot :)
